I am thankful for may things. I am thankful we have enough to eat. I am thankful we have a roof over our heads. I am thankful that my children are healthy, and I am thankful that even though we may not have a lot, we have enough right now. I am also thankful that I was able to put on a fabulous Thanksgiving Turkey dinner for my family (and also thankful that we will be eating the leftovers for the better part of the upcoming week).

Six Bean Chili Recipe
Serves 4-6 (or more)
The recipe I use for my Six Bean Chili is not really a recipe, its more of a gathering of ingredients and dumping them into a pot (or crock pot as the case may be). I don’t measure anything, I just dump and simmer until I’m ready to eat. Its one of the reasons why I love this time of the year! Soups, chowders, stews and chili! Delicious foods that are budget friendly, easy to make, and warm you up on a cool (or cold) day!
I love love love soup and stew season. For me, there is nothing more comforting after a busy cool day than sitting down with my family and enjoying a hearty bowl of soup or stew. I like meals like this for several reasons.
One of my favourite “back to autumn” meals is Corn Chowder and Cheese and Bacon Muffins. Its easy, hearty, good on the budget, and so good.
The very first cookbook I ever received was Company’s Coming Muffins & More by Jean Paré back in the early 90s. I LOVE this cookbook, and I’ve used it so much that the cover is missing and the pages are stained. It is loved, and it is used often. I have other Company’s Coming cookbooks that I enjoy and use, but none are quite as loved as Muffins & More.
Autumn has finally arrived and I’m pretty excited about that! I love the cooler weather, I love the crispness in the air, and I love all the colours that happen when the season changes to autumn. I also love the food! I love getting back to making stews, soups, chowders and other hearty foods that I don’t make over the summer.
