Serves 4 (as a side dish) or 2 (as a main dish)

Quick and Easy Fried Rice

I love rice, and I love how versatile rice is, but plain rice can get really boring really fast. One rice dish I never get sick of is fried rice, and luckily its a quick and easy side dish to prepare! As an added bonus, this rice dish can be made for only a couple of dollars. Fried Rice isn’t just for Chinese food anymore.

Ingredients

  • 1 tbsp vegetable oil
  • 1 medium carrot, finely diced
  • 1 medium onion, finely diced (I don’t like onion, so I skipped this)
  • 1 stalk of celery, finely diced
  • 2 cups prepared rice, cooled
  • 1/2 cup frozen peas
  • 1/2 tsp ground ginger
  • 1/2 tsp ground garlic (or 1 clove minced)
  • 1/4 cup soy sauce
  • 2 eggs, lightly beaten
  • a couple shakes of salt

In frying pan, heat up oil over medium heat. Add vegetables and sauté until tender.

Add rice and stir well.

Add ginger, garlic and soy sauce. Stir together.

Add frozen peas, and stir-fry until peas are cooked (and warm).

Move rice mixture to one side of the pan, and add eggs. Season eggs lightly with salt.

Scramble the eggs until cooked. Combine the eggs and rice together.

Add any protein or vegetables you like to make this recipe your own. Chicken Fried Rice? Add chicken. Mushroom Fried Rice? Add finely diced mushrooms. Anything goes!

    We often have fried rice as a main dish, same thing as you just cutting up chicken, pork, beef, bacon, etc. Varying the meat and vegetables so we don’t get sick of it.
