Sweet Potato Pie with Cranberry Apple Reduction Recipe
I LOVE comfort food. Food that just hugs the belly and warms the insides. Where every bite and morsel makes you smile contently. It’s even better when you make it yourself. I love experimenting with food and see what exciting flavors I can combine to make delicious mouth watering dishes.
For This Sweet Potato Pie Recipe You Will Need the Following:
2 Yams (Sweet Potatoes)
6 White Potatoes
6 Strips of Bacon
A tad of freshly grated Ginger
1 can of Cranberry Sauce
1 brick of soft Cream Cheese (can use Pizza Mozzarella as a substitute)
1/3 brick Armstrong Cheddar Cheese (Medium or Old)
Peel, rinse and chop the 2 Sweet Potatoes, add water and boil until fork tender. (Do not overcook).
Peel, rinse and chop the 6 White Potatoes, add water and boil until fork tender. (Do not overcook).
Peel, rinse and dice the onion, add 1 tbsp butter, grated ginger and 1 tsp cinnamon to pan. Cook on low heat as to not burn. I use unsalted butter as it has a less chance of burning than salted butter. We are going to add a nice caramelization to the onions. Add 1/2 a chopped apple too.
Peel, core, rinse and chop the 3 apples. Open the can of Cranberry Sauce. Add the sauce and 2 1/2 apples to a pan, cover and place on medium heat – stir occasionally to reduce. Don’t forget to add 1/2 a chopped apple to your onion mixture.
Add 6-8 strips of bacon to a pan and fry until crispy. Drain the pan of grease and pat dry the crisp bacon with paper towel.
Chop the bacon into little crispy bits and place back into the pan. Add 1 tbsp Maple Syrup and 1 tsp cinnamon and place on low heat. Stir until the Maple Syrup has cooked down. This will give the bacon a somewhat candied effect.
Grate approximately 1/3 the brick of Armstrong cheese and cover with a paper towel or plate to keep the cheese from drying out.
Once cooked, drain the white Potatoes well and add 1/3 brick grated Pizza Mozzarella cheese. Mix well with a masher.
Once cooked, drain the Sweet Potatoes well and add 1 tbsp butter and 2 tbsps Cinnamon. Mix well with a masher.
Add a layer of white Potatoes to the Pyrex dish approximately 2 cm in height (use your judgement). Then add a layer of the caramelized onion and apple mixture.
Add a layer of cheese (as much or as little as you want) then repeat.
For this size pan I was able to place 2 layers of all the ingredients. For the final layer, place in the Sweet Potatoes and spread evenly. Cover and place in the oven on 350 for 45 minutes.
At the 30 minute mark, remove, uncover and sprinkle cheese and the candied bacon bits on top. Place back into the oven for the remaining 10-15 minutes.
Remove from the oven and let stand to cool and set. (about 5-10 minutes).
Slice evenly, place onto a plate and decorate with the Cranberry Apple reduction.
I have NEVER made this Sweet Potato Pie before and let me tell you it turned out DELICIOUS!!! Simply mouthwatering. Like Christmas in a meal.
