Today was a SOUP day!
Not only is soup a great budget meal, its comfort food. It can warm you up on a cold day, and soothe you when you’re not feeling well. I pretty much use any excuse I can think of to make soup during the fall and winter months.
Today was a soup day for me. After taking stock of what ingredients I had on hand, I decided to make a Beef, Barley & Mushroom soup, and I think I have found a new favourite. Like most of the soups I make, this one was easy to prepare, hearty and filling, and I was able to prepare it in just over an hour.
Beef, Barley & Mushroom Soup
Makes 6 generous servings
- 1 inexpensive cut of steak, finely diced (fat removed)
- 1 medium potato, peeled and diced
- 4 small carrots (or 2 large carrots), peeled and thinly sliced
- 1 parsnip, thinly sliced (I diced the larger end, sliced the thinner end)
- 1 tomato, diced
- 2 celery stalks, thinly sliced
- Sliced mushrooms (about 1 1/2 cups)
- 1/2 cup barley
- Beef broth, bouillon, or stock (I used 2 Knorr Homestyle Stock and Broth)
- 3 cloves garlic, minced
- 1 tsp Onion Powder (or 1 finely diced onion)
- Salt and pepper (to taste)
In a large soup pot, dissolve 1 of the Beef Stock packs in 4 cups of boiling water. Add the beef, barley, onion powder and garlic, and bring back to a boil. Turn down the heat to medium, and cooked at a low boil for about half hour.
While the beef and barley cook, prepare the vegetables. Cut the celery, parsnip and carrots thinly, and dice the rest of the vegetables into small cubes so that they cook fast.
After the beef and barley have been cooking for half an hour, add another Beef Stock and 2 cups of water, and bring to a boil again. Add all the vegetables, and simmered on medium heat for about half hour until the barley and vegetables are tender.
Add salt and pepper to taste, and more water if needed.
