Crazy Easy Vegan Desserts

Who knew that Vegan and Gluten free could taste so good! My preconceived notions of boring, dry and tasteless treats were quickly quelled. It’s no secret that I am far from being vegan. That said, the recipes in this book include some things I have made, only with a slight change in ingredient or two. If you love desserts, like I do, you’ll definitely want to take a look at these amazing recipes.

The author of Crazy Easy Vegan Desserts, Heather Saffer, is the founder and CEO of Dollop Gourmet, a natural foods company that produces vegan gourmet frosting and snacks made from non-GMO and gluten-free ingredients. I visited the website and saw a woman who instantly sparked a memory within my mind. You know the kind where you know you’ve seen someone somewhere but can’t quite place where you met them? This is what happened to me. While browsing the website and seeing the words Shark Tank and Cupcake wars, right away I knew! I watched the episodes with her in them. I’m surprised that I even remembered because she was on Cupcake Wars in 2012. Maybe the reason I recall is the fact that she won. As for her pitch on Shark Tank, I knew that was more resent, 2016 in fact. Since then, Heather has been featured on Oprah and Yummly among others.

I think this book was written for me! I love desserts! I love them even more when they are quick to make. No bake is great! Minimal ingredients and easy and quick prep times are even better.

When I received the book, it took me quite some time to pick and choose which desserts I was going to make and try. Browsing through the 75 recipes, it was a really hard decision because they all looked so delicious and each one appealed to me for varying reasons. In the end, I chose the following three recipes to try. I was amazed at how great they tasted. Obviously they do not look like the photos in the book, but mine never do. lol

Cinnamon Sugar Cookies

From start to finish, these cookies only took about 35 minutes to make. Crunchy and a bit crumbly on the outside while soft and tender on the inside, they are the best of both worlds. So simple and barring one ingredient, I had everything in my cupboards already. These have just the right amount of sweetness which isn’t overpowering. If you are looking for a dessert that satisfies without a lot of sweetness, these are perfect.

1- 1/2 cups gluten-free flour
1/2 cup plus 1/3 cup granulated sugar, divided
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened apple sauce
1/2 cup vegetable oil
1 tablespoon vanilla extract
1- 1/2 teaspoons cinnamon

1. Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper
2. In a medium bowl, whisk together the flour, 1/2 cup sugar, baking soda and salt.
3. In a separate bowl, mix together the applesauce, oil and vanilla
4. Slowly add the flour mixture while mixing on medium speed until well combined. Refrigerate the dough until firm enough to roll, 10 to 20 minutes.
5. In a small bowl, stir together the cinnamon and the remaining 1/3 cup sugar
6. Shape dough into 1 inch balls and roll in the cinnamon-sugar mixture to coat.
7. Flatten each ball slightly, arrange the balls on the lined baking sheet and bake until; the edges begin to brown, about 10 minutes.

This recipe caught my eye because it’s a sweet twist on the usual party mixes that I make which are usually salty, salty and oh yeah – salty. Okay, so I have to admit I was craving some chocolate love at the time. This is a recipe that can be made in a pinch to serve guests as it’s so fast to make. Within minutes everyone can be enjoying this delicious dessert.

It’s no secret that I am not vegan but I have tried some vegan desserts. For those of us who teeter between vegan and non vegan foods, I was thinking that making this would be a better alternative for kids sugar coated cereals. Think Count Chocula only better because you can control the amount of sugary sweetness that is added. I haven’t tried it by adding milk to it in a bowl yet though.

1 cup vegan instant hot cocoa mix
2 tablespoons ground cinnamon
3/4 cup chocolate chips
6 cups Rice Chex cereal (or another you prefer)
1 cup mini marshmallows

1. Combine the cocoa mix and cinnamon in a large resealable bag and mix well.
2. Microwave the chocolate chip[s in a medium bowl at 30 second intervals, stirring in between, until completely melted and smooth.
3. Mix together the cereal and marshmallows in a large bowl. Pour the chocolate over the ix ad toss until evenly covered.
4. Pour the coated cereal into the cocoa and cinnamon ad shake the bag until everything is even coated.

While making all these crazy easy vegan desserts, my dog kept looking at me with those puppy dog eyes that are hard to resist. While I was searching for one more recipe to make, I came across this one. For the love of Peanut Butter and my dog are the two reasons why I chose this tasty treat. It’s so fast to prepare and requires minimal ingredients. They are so soft and melt in your mouth. Tracker was drooling and couldn’t wait to sample one. She kept coming back for more. We often snuggle together and we share snacks, most often it’s veggies or fruits. It was nice to be able to share a decadently delicious treat with her that normally only I would be able to eat. Tracker says thank you Heather! I think I will be making these a lot.

2 ripe bananas, mashed
1 cup rolled oats
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract

1. Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper
2. In a small bowl, mix all the ingredients together until well blended. Arrange tablespoon size balls of dough on the lined baking sheet and flatten slightly.
3. Bake until slightly golden, 12 to 15 minutes. Remove from the oven and let cool completely.

Crazy Easy Vegan Desserts has many more wonderful recipes. More than just cookies and biscuits. Truffles, cupcakes, cheesecakes and ice cream sundaes are the first that come to mind along with many more! This hard cover book is definitely a must have, in my mind anyhow. I’m so glad I said yes to doing this review and opened myself up to trying new and different things.

There is something for everyone that the whole family can enjoy, even the dog! If you aren’t vegan, I’m sure you’ll love the taste and deliciousness of these desserts. They have changed my whole outlook on vegan foods.

    I’m not vegan but my cousin is and if she visits I need some ideas for recipes. the Cinnamon Sugar Cookies would be what I’d try first. Whole-food vegan diets are generally higher in certain nutrients and they have a natural tendency to reduce your calorie intake. This makes them effective at promoting weight loss without the need to actively focus on cutting calories.

    I would love to win this cookbook because I am both gluten and lactose intolerant. When I eat gluten or dairy I get extremely ill and have to stay in the washroom for a really long time. Once I was glurened and was bed ridden for three days. The pain was excruciating! Of these three recipes I would make the Mexican hot cocoa party mix first because I have had nothing like that since I was a child. It would be a really cool experience to try that.     I am going to try the Mexican Hot Cocoa Party Mix. I am a celiac and I always have Rice Chex on hand so this is the perfect recipe for me. The Cinnamon sugar cookies look really delicious also and look easy to make.
