Leftovers Lasagna

What to do with Leftovers? I do not like wasting food and hubby has a habit of making a new meal everyday. Last night, I looked in the fridge and there were so many leftovers in there that I wasn’t sure what to do with. I could have made sandwiches and had some of the leftovers just heated up on the side but I didn’t want that. Then a light bulb went off in my pretty little head. I knew exactly what I was going to make. I called it Lazy Day Leftovers but then hubby dubbed it Leftovers Lasagna – because it was so cheesy!

It was really simple to make. All I did was take all the leftovers I had and cut them up into little bite sized portions and add them into the dish.

Ingredients on hand were:
Potatoes (slice into bite sized pieces)
Corn on the Cob (remove kernals from the cob)
Steak (slice into bite sized pieces)
Peameal Bacon (remove fat around the edges and slice into bite sized pieces)
Broccoli (slice into bite sized pieces)
Bacon Bacon (save this for last)
Shredded Mozzarella Cheese (mix half in with ingredients and half on top)

Once I sliced and cut everything and placed in in the dish, I mixed in half of the shredded cheese and then placed the rest of the cheese on top.

Next, I took the leftover bacon and placed that on top of the cheese.

I baked it at 425 for half an hour and voila! Quick and simple meal using all the leftovers I had in my fridge. The bacon was crispy and the meal was delicious.

SO simple and easy to make. I’m glad I thought of it. So the next time you have leftovers in your fridge think about Lazy Day Leftovers!
