I know that there is a HUGE discrepancy on what a macaroon is, and there are MANY different names for the recipe I am about to share. For me, the proper name for this cookie is MACAROON.
Molasses Cookies is actually a recipe I make year round because it is one of the boys’ favourites and it keeps well in a sealed container on the counter. It is very similar to a gingersnap cookie, but soft and chewy (if stored in an air tight container on the counter).
