When I made my One-Pot Lazy Cabbage Roll Casserole, I ended up with double the amount of food as I was expecting. I knew that there was no point in freezing the leftovers for a future meal as frozen leftovers rarely get eaten in my house so I decided to use up the leftovers creatively and make stuffed peppers. What I thought was a budget dinner (the complete Cabbage Roll Casserole meal came in under $13) turned into a double duty meal. For both days, the total spend on ingredients was around $18, and there were even some leftovers for lunch on day three.

When I do my meal planning, I try to include as many Budget meals that are $15 or less as I can. This helps me keep within my grocery budget (which is always stretched pretty thin) and allows us to have some splurge dinners as well.

There are lots of meals that are considered budget meals, complete meals that can be prepared for $10 or less for a meal that serves 4. Since I have a larger than average family, I’m happy if I can prepare a complete meal for under $15. If I can prepare one for under $10 I’m thrilled (insert happy dance here). Since I have young kids, I also lean towards FUN dinners, and these are the ones that are family favourites.

Little note before we get into it, if you’re looking for extra ways to reduce monthly spending, a friend recommended Money Expert. They do some great deals on car insurance and certainly saved me some money for exactly what I was getting before.

One of my favourite things about Autumn is the food. I love comfort foods like soups, chowders and stews. I love how filling they are, how easy they are to prepare, and how budget friendly the recipes are. I find making soups a great way to stretch my budget without sacrificing flavour while creating filling, satisfying meals. I remember when I first started making soups and feeling overwhelmed because I had no idea what I was doing, but it really is as easy as throwing a bunch of ingredients into a pot and letting it cook.

The recipe I use for my Six Bean Chili is not really a recipe, its more of a gathering of ingredients and dumping them into a pot (or crock pot as the case may be). I don’t measure anything, I just dump and simmer until I’m ready to eat. Its one of the reasons why I love this time of the year! Soups, chowders, stews and chili! Delicious foods that are budget friendly, easy to make, and warm you up on a cool (or cold) day!
